HEALING HEARTS: A Turquoise Treasures Romance

BISCOCHITOES-my mother-in-law’s recipe
1/2 cup solid butter-flavored shortening or margarine
2/3 cup sugar
1 1/2 cups flour
1 tsp. baking powder
1 tsp. anise seed
1/2 tsp salt
1 egg
1 tbls orange juice
cinnamon sugar (mix of 1/4 cup sugar and 1 tbls cinnamon)
- Preheat oven to 350°.
- Cream together shortening and sugar.
- Add flour, anise seed, baking powder, and salt.
- Combine egg and orange juice, then beat into creamed mixture a little at a time. Dough should be moist, but workable.
- Form into a long roll and let cool in the refrigerator, then slice 1/4 inch thick. Pat each cookie on one side with the cinnamon sugar mixture and place unsugared side down on an ungreased cookie sheet. (After slicing, I put the cookies on parchment paper and sprinkle a bit of the cinnamon sugar mixture on top of each one.)
- Bake 8 to 12 minutes or until lightly brown.
